Candy Apple Salad



This is either a very healthy dessert, or a very decadent salad. Either way, it's yummy!

Dressing:

2 tablespoons mayonnaise
1  1/2 tablespoons Cool Whip or sweetened, whipped cream (I keep already whipped cream in mounds in the freezer. For something like this, I just cut however much I need from one of the frozen mounds. See this post.)
1/2 teaspoon lemon juice


In a medium bowl, combine mayonnaise, Cool Whip or whipped cream, and lemon juice.

Salad:

1 large apple, skin on and chopped
1 large banana, sliced
8-10 whole dates, pitted and chopped
1/4 cup of almond slivers or slices, toasted very lightly, on a baking sheet, in 350 degree oven, until just barely golden
1/4 cup butterscotch baking chips


Add all of the above ingredients to the dressing and toss. Serve over lettuce leaves, or as is. Makes 4-5 servings.


Alterations:

If you don't have the Cool Whip or whipped cream, you can also substitute a tablespoon and half of vanilla yogurt, and leave out the lemon juice.

You can make this with 2 large apples, instead of 1 apple and 1 banana.

If using pre-chopped date pieces, use about 1/4 cup to 1/3 cup of date pieces.

  1. Another tasty version of a Waldorf Salad which I love. However adding butterscotch chips takes it to a whole new level. I would go for healthy desert. :)

      And for a dessert, it really wasn't too sweet, which is often just how I want my dessert, sweet but not overly so.

  2. Wow, does that look good! Sadly, I don't have half the ingredients to make this and probably won't buy them either. I will, however, make substitutions. I don't have dates nor do I have almonds right now so I just have to skip those and I don't have butterscotch chips. My salad will have to be made with the fruit, mayo and whipped cream, and caramel ice cream topping and I'm hoping it will taste as good as yours looks!

    I only wish I had known the recipe yesterday as that would have gone well with my Sunday dinner of meatloaf, cabbage and potatoes and bread.

      I think your version with caramel topping would be good, too! A little bit of the caramel mixed in with the mayo/whip cream, then a thin drizzle over the whole salad. Yum!

    Like Live and Learn, for us this would have to be dessert; but we love fruit desserts. :) I think butterscotch chips have soy in them, so I would skip those. But this would probably be another great place to use that butterscotch flavoring we were talking about on e-mail! :) Also, I bet you could get that flavor if you candied your almonds (super-easy and tasty!)

      Now there's a great use for the butterscotch flavoring. And then you can use however much or little sweetening you like, and make it honey, if that's what works best for you. And yes, candied nuts would be quite yummy!

  5. This is similar to Snickers Salad, which I think is a midwest potluck item--using cut-up Snickers bars instead of the nuts and butterscotch chips. I would put it in the dessert category but it is tasty!

      doesn't a Snickers salad sound yummy?! Definitely dessert-like. I think having the chocolate mixed with the fruit puts it over the edge into dessert territory! But still sounds good to me!

  6. I love all of the substitution possibilities. We will try this with the yogurt option. I do not have the butterscotch chips so may try white chocolate chips that I do have on hand. Thank you for posting the recipe!

      That sounds really yummy with yogurt and white chocolate chips! Other fruits would work well, added to the vanilla flavor of the white chips, I'd think, like strawberries or raspberries, instead of banana. I'm mentally filing this idea away for summer when our berries are producing!

    Sounds soooo! good yum. I think I will make it with raisins,
    dried figs or dried cranberries. I do not have the dates.
    I think I will use pecans no almonds here. I will use yogurt
    and make a homemade caramel sauce. We do not have chips at the moment. My FNA biopsy is scheduled for this coming Wed. check in 10:30. Currently I am approved for them to biopsy 2 out of the 3 nodules that look suspicous. I am hoping to get approval for the 3rd nodule it is a little smaller than the others but not tiny. I am believing for a good report.

  8. I think I'll start making more salad desserts like this, maybe a gelatin mold. Perfect with meals since we seldom eat cakes and pies.

      I love fruit desserts. I don't feel overly full afterward, but still get that taste of something sweet. Jello salads are always a bit hit around here. Just as soon as the rhubarb is up in our garden, jelllo will go back on our regular menu. My son's GF made a really delicious grapefruit gelatin, earlier this year. It was very refreshing, and not at all sickly sweet like some jello salads can be. She used some sort of seaweed for the gelatin part. It made the end product firmer than Knox gelatin. But very good!

    2. Sounds like agar, which is derived from seaweed and sold usually in red, white and green long rectangle sticks. I love "kanten", a japanese gelatin dessert, which is made from agar. Your son's GF's gelatin sounds really delicious, and quite unusual.
