Cheap & Cheerful Suppers for Early March

Friday
  • ham sandwiches on homemade French bread
  • canned corn
  • canned green beans

husband cooks
  • vegetarian enchiladas

Sunday
  • ham, French bread and egg strata
  • grapes
  • celery and carrots sticks
  • cookies
Monday
  • ham, egg and vegetable fried rice
  • tangerines
Tuesday
  • lentil and ham soup, with canned pumpkin, celery, onions and garlic
  • French bread and butter
  • apples
Wednesday
  • hot dogs in buns (budget hot dogs, budget buns -- 18 cents per hot dog/bun combo)
  • canned green beans sauteed with mushrooms
  • rhubarb-blackberry sauce from the freezer
Thursday
  • baked chicken breasts
  • onion, peppers, garlic, sauteed and added to strips of chicken, wrapped in a
  • flour tortilla
  • canned pineapple
  • pumpkin spice snack cake
How was your week? Do you have spring weather where you live? Anything interesting on your menu this past week?

You may have noticed a few extra produce items for my family. After a couple of months of living off of canned vegetables and frozen fruit, I splurged last Friday and bought some fresh fruit: grapes, oranges, tangerines, apples and bananas. I also found peppers on markdown (3/$1) and mushrooms marked down ($1.29/8-oz). The fresh fruit is our splurge for the month. It's been so refreshing to have these juicy fruits.

  1. We had meatloaf and mashed potatoes on Sunday. Monday and Tuesday were homemade pizza. Wednesday was spaghetti and Thursday was leftover spaghetti for hubby and a baked potato with spinach for me. Today I have pork pieces thawing but I'm not sure what I'm making with them. The freezer (both kitchen and garage) are becoming less full which is good. The variety of foods are still good but either today or tomorrow I will need to go grocery shopping. We're out of milk, OJ, and a bunch of other stuff

    The weather is strange. We had some very bad and damaging winds on Wed. so everyone is in cleanup mode. I got a lot of twigs and branches cleaned up last night but there is a lot of leaves that have blown in my window wells and in the steps that go to the basement room. If the weather stays calm today I will work on that after I get home from work.

      Your meals sound very tasty! I'll come over any night!
      My freezer was emptying out, and then I filled it right back up this week, in a good way, with home-cooked ready-made meals and some bread that I bought for 59 cents/loaf. But it's hard to find things, once again, which is very frustrating for me.

      It sounds like springtime storms in your area. We've had a lot of wind and rain, here, recently too. I heard a tree come crashing down in the night a week ago, in one of our neighbors's yards. I hope this all dissolves into beautiful spring days very soon, for all of us!

  2. We've done more "eating" on the fly this week....only using ingredients on hand, but a more of "what are we in the mood for." It's worked because there have only been two of us and it is taking so little food.

  3. We continue to eat what is on hand, but I finally caved and bought some grocery needs, including lettuce, cabbage (super cheap this time of year), tomatoes,celery, red potatoes (St Pat's). I did buy the one item on my menu plan that was needed: corned beef, which I usually only ever make but once a year. I did get one at $1.88/lb as a loss leader. I chanced upon some marked down meats (see my blog) and made some meatballs for the freezer as a result. Wasn't planning that, but the price enticed me, and going forward, as I absord the costs associated with my home purchase, I know that I must continue to live purposefully. Having some homemade meatballs in the freezer to fall back on is a blessing.

      That's a great price on the corned beef! And I'm sure your family will really enjoy it and that you made St. Patrick's Day special. SPD also happens to be my daughters's birthday, so the SPD part of it has been minimized since they were born. I think I've only cooked corned beef twice in their lives. I usually give them license to choose the dinner on their birthday, and corned beef doesn't come up often! You're right on having the meatballs ready-made in the freezer. It will keep you from spending on take-out or convenience food, and give your family foods that suit your dietary needs.

Starting last Sunday, I knew this week was going to be hectic, since I was put back up to full-time at my University job (yea..but no prior notice) so been doing full-time and my part-time work...however, sandwiches Sunday, lasagna/salad/bread Monday (and Tuesday as leftovers), Hotdogs/applesauce/jello Wednesday, Last night was just my son and I so we did chicken nuggets and applesauce w/ carrots. Tonight is going to be hectic since son has swimming meet..so probably just sandwiches again...and tomorrow is family night so a take-n-bake pizza from aldis (that i doctor up w/ veggies)and movies... yea! time to put up my feet! I will figure out next week meals maybe saturday night..maybe not! Have a great weekend everyone.

    1. Congratulations on returning to full-time at your U job, Lisa! I can see how your life would turn from "regular" busy to hectic busy with that schedule change. Good luck with this!

  5. We had a fun week as my daughter was on Spring Break. We managed to eat most meals in, but did have some restaurant meals this week too. We are back home now, so we will be making all our meals at home.

    Hope you enjoy your Sunday. We had snow overnight, so it's not yet spring time here yet.
