Cheap & Cheerful Suppers for the Last of May

Friday (just 2 for dinner)
  • hot dogs in homemade buns 
  • homemade French fries
  • roasted carrot sticks
  • sherbet
Saturday
  • leftover pasta in sauce
  • scrambled eggs
  • frozen broccoli
  • sherbet
Sunday (husband cooks)
  • egg, cheese, and rice dish
  • fried corn tortilla
  • carrot sticks
Monday (Memorial Day)
  • baked hot dogs in buns
  • green salad (lettuce from garden), topped with olives, celery, roasted pecans, and prunes)
  • sherbet
Tuesday
  • black bean and cheese burritos
  • roasted carrots
  • olives
  • sherbet
Wednesday
  • baked chicken
  • brown rice
  • broccoli
  • rhubarb pie
Thursday
  • spinach frittata
  • baked potatoes
  • rhubarb pie
  • what it really was -- waffles, whipped cream, frozen blackberries
Busy week. Life is having to take a back seat to some other situations and projects. I hope your week went well. What was on your menu this past week? Anything interesting? How do you change menus when the warm weather hits your area?

  1. We've been making baked french fries this week. They are so good that my daughter has taken to making her own, which is something she never does - work in the kitchen - lol.

      Well, that's a wonderful thing that Bailey has found something that good that she wants to make her own. I think that's what gets most of us interested in cooking to begin, finding something that we really enjoy eating. Have a great week, Belinda~

  2. We had home cooked and delicious meals every night many of them made by my son.

    Chicken and rice
    BBQ chicken
    brats and turkey burgers

    These are just a few meals. Tonight I'm making BBQ'd pork ribs with a sweet baby rays copycat sauce (no high fructose corn syrup) and homemade biscuits.

    I needed some meat for the freezer and pork was on sale so I bought enough for the summer. There goes my grocery budget!

    1. Do you have a recipe for your Sweet Baby Ray's? We love that BBQ sauce and it would be fun to make it.

      We had chicken and rice last night. Tonight I re-heated burgers (tired after working and being up with a sick kid last night). I tried a new soup a couple of nights ago (getting late in the season for me to make soup, but I checked a cookbook out of the library and it sounded good--I made no-knead bread to go with it). Hubby grilled burgers one night, pulled pork another, and brats a third over the holiday weekend. I got ambitious and made rhubarb pie yesterday .... definitely a highlight!

      I made the BBQ sauce and we declared it to be just like sweet baby ray's. I did thicken mine a bit more.

    4. I'm sorry, Kris, that you've had a sick one this past week. I hope everyone is recovered now. This is such a crummy time of year to catch something. There's lots of fun stuff with year end school, and to be sick and miss any of it is rotten.

  3. We have carrots all the time at our house, especially recently, since I found a deal on them. I see that you do too. Does your family ever get tired of carrots? So far, we're still okay having them frequently.

      If they do, they don't mention it to me. They're such an easy veggie to make, and very affordable. Until our garden starts producing better, we'll be eating lots of carrots. I don't mind. I sometimes have carrot sticks with my breakfast, even.

  4. Comparing our meals to yours this week, I can see there's a lot of overlap - carrots, broccoli, homemade fries, scrambled egg, rice dish, rhubarb pie, olives... What's sherbet though? Over here it's a sweet sugary fizzy powder...sold as a kids candy with a licorice stick or lollipop to dip. I have a feeling that's not what your sherbet is...

      Yep, what Kris said. It's like ice cream, just little to no cream. It's a fruity syrup sometimes with egg whites in it, sometimes with a little milk in it, and frozen like ice cream. It's a lot like sorbet. My favorite is rainbow sherbet.
      Meals are plain and simple around here, these days. I hope all is well with you and your family.

    5. Sarah, that was an interesting article on sherbet. And it explains why I sometimes can eat it without stomach problems and sometimes not. The sherbet powder that you're familiar with sounds a little like a fizzy powder popular when I was a young girl for making drinks. It came in tablets or powder, and was flavored. You would add some to a glass of water to make a sparkling punch-like drink. The tablets were called Fizzies, and were a popular birthday party thing. Way more exciting to me that birthday cake or ice cream, to get to have a glass of that drink at a party.
