Cheap & Cheerful Suppers for the cook who doesn't want to put a lot of effort into meal prep


So another easy week of meals around my house. I must sound like the laziest cook around! Not lazy, just prioritizing other things over cooking, for the time being. I'm writing this from memory and I can't remember what Sunday was.

Saturday -- curried vegetables and chickpeas over fry bread, blackberries
Monday -- hot dogs over a fire, potato salad, cole slaw, strawberries, s'mores
Tuesday -- lentil soup from the freezer, garlic toast using hoagie rolls, cauliflower and mushroom saute
Wednesday -- egg salad sandwiches, pasta salad, green salad, fruit cup
Thursday -- meatball subs (using frozen meatballs and marinara sauce, in hoagie rolls), frozen green beans and applesauce

Tonight? Hmmm, I'll be out all day, with one of my daughters. Dinner will need to be fast and easy. I bought a 15-dozen case of eggs a week ago, so I think I'll do an egg-based supper. It might just be scrambled eggs and toast, with bananas and frozen peas.

One of my daughters and I are exploring business possibilities. So today is fun research. I don't want to talk about it too much, just yet. We need to firm up some ideas first. But I can say this much, today will be a very fun day for the two of us.

I hope you have a wonderful weekend, and you are out of range of Irma, where ever you may be. If you happen to live in the hurricane's path, stay safe, and may God protect you. I'll be praying for you.

    Have fun exploring today!

    I always try to remember what we ate all week and never can quite remember the details.

    Monday-out to dinner for our anniversary.
    Tuesday-squash/stuffing casserole, baked chicken and apple/cinnamon apples
    Wednesday--Instant pot spaghetti and shared half with a sick neighbor.
    Thursday--vegetable beef meatball soup with BLTs.
    Friday--up in the air as always.

  2. Your suppers still sound great. Is is hard for you to adjust to feeling okay with spending less time cooking? Does it not feel quite right? Or are you enjoying the fact that you don't have to spend a lot of time cooking and still feed your family well and economically?

    I'm glad you're looking forward to a fun day with your daughter. You need some of those.

      in answer to your question -- I think I just don't care most of the time, and that is not like me. I am glad that I have found ways to "do" dinner with less effort, though. Maybe I have moved out of the phase of cooking a lot. That's okay, right?

  3. My big kids were all gone this week, so that made meals simpler for me, which is good because I'm still canning peaches & pears. My husband & I had salads & eggs. I made the free box of mac & cheese I got for free from Freddie's for the little boys.

    So glad you're going to have a fun day, today, Lili! How exciting! Melissa

      Great use of the Annie's mac and cheese from FM. One box doesn't make much, so using it for your younger boys is perfect. The last time I got one of those boxes I gave it to one daughter who would be sleeping over with a friend. I still have the recent one, waiting for some sort of meal emergency.

  4. Have a fun day today with your daughter!! How nice that you get along so well. Any amount of time spent researching your interest is a step forward. That's the way I look at my "crafting", every bit of knowledge or information is a good thing.

  5. It's good to hear you be excited about your plans with your daughter. :)

    It was a holiday week and then my husband was out of town for a couple of nights, so a bit weird on the cooking front. Monday--grilled pork chops? Tuesday--pancakes and sausage. Wednesday--baked potato bar. Thursday--roasted chicken in the crockpot. Today--chicken stew in the crockpot (from yesterday's chicken and broth)--I took a page out of your book, Lili!

    My best friend lives in FL and they are thinking of evacuating. Scary indeed.

      I think easy meals while your husband was away sounded just right. When I was a child, my dad would be gone a few days per week, and my mom always made those the nights we'd have pancakes or TV dinners for our dinner. My dad would not have liked having pancakes for dinner, but as kids we thought that was great.

  6. I Hi, Lili, you sound very upbeat today! Re: your curried veg with chick peas. Did you use a ready made sauce? I'm interested in finding an easy home made version. I think that I have the ingredients on hand, but I have no experience with Indian food. I am willing to learn, though! God Bless, Bonnie

    1. Hi Bonnie,
      It was one of those, some of this, some of that sort of curries. My best curry recipe comes from a friend, for curried turkey. I use that recipe for curried lentils as well as turkey or chicken. I'll post that recipe. It calls for apples, onions, curry powder, tomatoes, and chutney, I think. I'll find it and post soon.
