Cheap & Cheerful Suppers for Mid-October

Saturday
  • nachos platter with chips, beans, rice, beef, peppers, tomatoes (no cheese -- all out)
  • apple wedges
  • celery sticks
Sunday
  • oven-roasted sausage, vegetables, potatoes
Monday
  • pumpkin and sausage soup
  • brown rice or crackers
Tuesday
  • waffles with blackberry sauce and yogurt topping
  • bacon
  • applesauce
Wednesday
  • a delicious casserole of leftovers -- bacon, sausage, mushrooms, rice, zucchini, green onions, and turkey stock. You can't go wrong when leftovers are bacon and sausage.
  • steamed cauliflower
  • pecan pie
Thursday
  • beef and bean chili from the freezer
  • baby carrots, celery sticks, olives, ranch dip
  • toast
Friday
  • looks like it will be another Friday night, frozen corndog and sweet potato fries dinner tonight. It's easy, quick, and had minimal cost. I'll also add some steamed cauliflower.
As this third week of the month winds down I am turning to treats hidden in the "secret" pantry, frozen goodies, and canned items. I bring a couple of packaged treats out of that secret pantry once per week. Yesterday I pulled out a box of granola bars and wheat thin-type crackers, as well as a can of frozen pomegranate juice concentrate from the freezer. We still have a lot of tasty foods in the house, so all is well.

  1. I'm not sure which of your meals sounds best--they all sound tasty! I'm intrigued by your pumpkin and sausage soup-details, please!

    I noticed your breakfast-for-dinner meal (we call it brinner)--I've been doing that a lot lately. Last week I made a cheesy egg casserole. This week (on a night my husband was out of town) I made pumpkin french toast and sausage. For some reason, it seems like a treat when we have brinner.

    1. Hi Kris,
      Thanks. The pumpkin and sausage soup used canned pumpkin, turkey kielbasa, onions, celery, sage, chicken stock, red pepper (the spice), and leftover brown rice. It was on the thinner side (broth-y), so not overly pumpkin-y. No recipe, but a basic saute onions and celery in a bit of oil, add slices of the sausage to brown, then add rest of ingredients and simmer for 30 minutes.
      Oooh, yum. Cheesy egg casserole sounds delicious, as does the pumpkin French toast. Was that a regular French toast, but with a bit of pureed pumpkin in the batter? I agree. It does sound like a treat to have breakfast at other meals!

  2. I can't even remember what we've had to eat this week. We were travelling in the early part of the week. Oh yes,now I remember. Last night we had mac and cheese combined with tomatoes, tuna, and pesto. It was very good. Just the right combination of flavors. Let me say, once again, every night at your house sounds like a treat.

    1. Thank you, Belinda! The secret pantry has been my "secret weapon" for the grocery budget since I started having kids! It's just a way to meter out the treats over an extended period of time. The other way doesn't work for us, where I put everything out into view when it comes home from the store. All of the treat items get gobbled up in the first few days.

  4. You menu sounds very autumnal and yummy! Let's see if I can remember:

    Monday - Fend for Yourself Night, I think hubby and son had some leftovers, I had cinnamon toast
    Tuesday - Beef stroganoff, mixed veggies
    Wednesday - Ham and bean soup, crackers or bread & butter
    Thursday - Ham and cheese baked inside crescent roll dough, salad of iceberg, onion, green pepper, choice of dressing
    Friday - (Hubby cooked) Ribeye (from the freezer, our 1/2 of beef), fried potatoes, mac & cheese (son requested), broccoli
    Saturday - (Hubby cooked) Breakfast sandwiches, fried eggs, leftover steak sliced thin, cheese on bread or bagels
    Sunday - Homemade cheese pizza, salad of iceberg, onion, green pepper, choice of dressing

      Thanks for sharing your menu! I love getting ideas of what to make. I haven't had beef Stroganoff in a long while. I'll have to add that to our menu soon-ish! Maybe next week, if I can pick up some mushrooms. Do you use sour cream, or do you improvise? I'm thinking of souring milk w/ vinegar, as a sour cream substitute, and maybe using less. It would be like using buttermilk in place of sour cream. What do you think?

  5. All of the items sounds good as usual!

    I did make a crustless pumpkin pie and we really enjoyed that. We had apple/chicken sausages, bacon, whole chicken in the pressure cooker, meatloaf, scalloped potatoes, cabbage, chicken noodle soup. Tonight I'll make chicken pot pie from the leftover chicken. For the last couple years, I have not purchased cases of canned veggies but I think I might do that this year. With only three of us, I felt like I didn't need that but lately I've been missing opening a can when we get so terribly busy.

    The freezer foods were getting used and it wasn't full to the brim but then we found a few deals and filled it right up to the brim again! I will say that we hit the freezer pretty hard Monday through Friday and then a bit lighter on the weekend. I'll see a lower level during the week again.

    I call this a blessing. Plenty to eat.

      That is a blessing.
      I go back and forth on the canned veggies. They're not my favorite (except canned green beans, I do like those). But they are super convenient, and often a bargain in the fall. WinCo, near us, has canned veggies on sale throughout November, so I'll probably pick up a couple of cases.
      Thanks for sharing your meals. I get so many good ideas for our own menus by reading yours and others.
