Easter Luncheon Photos


Dessert first, because that's the fun part!  Carrot Cake Cupcakes with Cream Cheese Frosting, decorated with either chopped pecans or garden violets


Chocolate Pudding and Cake (a failed chocolate cake that I crumbled and topped with scratch cornstarch pudding and some chocolate chips)


Green Bean Casserole (the standard cream of mushroom soup recipe)


Sweet Potato Casserole with Praline Topping


Kale, Cranberry, Almond Salad with a sweet citrusy dressing


Roasted Brussel Sprouts


Pan Dinner Rolls

Plus we had a baked ham -- I didn't take a photo

  1. Everything looks so good and the cupcakes are beautiful. We cooked at my father-in-law's house since we still have limited kitchen facilities, and used some prepared foods. The menu was unconventional, but he said many times that it was wonderful. We had lasagna, ham, fruit salad, green salad, creamed spinach, lemon cupcakes, and chocolate eggs.

  2. Lili, your cupcakes are gorgeous! Do you have violets already?? My husband likes to sprinkle them in salads and on top of some of his savory meals.

    1. Thank you, Kris. Yes, our violets are blooming this week! I love to use them in spring. I'll have to add some to the next batch of greens I thin for salad. I'd never thought to sprinkle some on top of a savory main dish, but now I have some inspiration.

  3. That chocolate pudding cake looks so good I would like a bowl of that right about now!

    We had 3 slices of ham in the freezer that were individually packaged and sold individually and with that I made a hash brown casserole and a 7 layer salad. For dessert, I made a lemon pudding/cream cheese, whipped topping layer dessert on a buttery crust. We took it all to my parents house and whoever showed up and wanted some could eat. Not many people ate so I had leftovers which are good.

    Mom needs 2 adults now 24/7 so us kids are shifting our schedules to accommodate that.

      Your Easter meal sounds delicious! I'm glad you had some leftovers to take home to make meal prep easier during the week.
      The pudding cake dessert was the sleeper favorite. It began as a cake that failed and it turned out to be the big hit. Who knew?!

  4. A lovely Easter spread you created Lili!!.
    We did a brunch this year that kept moving because of the weather conditions.
    I try and make extras to pass onto family members attending or to send onto family that is house bound or in caregiver roles.
    This year there were lemon loaves, hot cross buns, a traditional Easter Bread called a paska that is made with saffron, and waffles.Haha, it appeared for this meal all the protein had been eaten.
    I think food is my love language.
    I just remember being both a caregiver and young parent and always appreciative of when foodstuffs would come my way. It is a creative outlet for me, but I place prayer and good intentions in the creations as a blessing to those on the receiving end.
    You did a marvellous job.

      What a lovely attitude you have towards giving of yourself, your time and your talent. I'm sure your recipients feel the love that goes into the foods you prepare for them.

      Your Easter brunch sounds yummy. Do you decorate your paska or shape it in any special way? I've seen photos of paska both decorated after baking (colored sprinkles on a glaze) and also done with the dough on the top before baking. I've never made one before, but maybe I will try it sometime.
