SPD also happens to be my daughters's birthday, so the SPD part of it has been minimized since they were born. I think I've only cooked corned beef twice in their lives. I usually give them license to choose the dinner on their birthday, and corned beef doesn't come up often! You're right on having the meatballs ready-made in the freezer. I'll come over any night!<br />My freezer was emptying out, and then I filled it right back up this week, in a good way, with home-cooked ready-made meals and some bread that I bought for 59 cents/loaf. But it's hard to find things, once again, which is very frustrating for me.<br /><br />It sounds like springtime storms in your area. We've had a lot of wind and rain, here, recently too. I heard a tree come crashing down in the night a week ago, in one of our neighbors's yards. Tonight is going to be hectic since son has swimming meet..so probably just sandwiches again...and tomorrow is family night so a take-n-bake pizza from aldis (that i doctor up w/ veggies)and movies... yea! time to put up my feet! I will figure out next week meals maybe saturday night..maybe not! I did buy the one item on my menu plan that was needed: corned beef, which I usually only ever make but once a year. I did get one at $1.88/lb as a loss leader. I chanced upon some marked down meats (see my blog) and made some meatballs for the freezer as a result. Wasn't planning that, but the price enticed me, and going forward, as I absord the costs associated with my home purchase, I know that I must continue to live purposefully. Having some homemade meatballs in the freezer to fall back on is a blessing. Mon...We had meatloaf and mashed potatoes on Sunday. Monday and Tuesday were homemade pizza. Wednesday was spaghetti and Thursday was leftover spaghetti for hubby and a baked potato with spinach for me. Today I have pork pieces thawing but I'm not sure what I'm making with them. The freezer (both kitchen and garage) are becoming less full which is good. The variety of foods are still good but either today or tomorrow I will need to go grocery shopping. We're out of milk, OJ, and a bunch of other stuff<br /><br />The weather is strange. We had some very bad and damaging winds on Wed. so everyone is in cleanup mode. I got a lot of twigs and branches cleaned up last night but there is a lot of leaves that have blown in my window wells and in the steps that go to the basement room.
