For what to call that part of rosemary, I think needles, leaves or needle-like leaves is accepted. I see a range of what people call the edible part. And I absolutely agree -- chicken and potatoes are two favorite foods of mine to flavor with rosemary! I'm thawing a whole chicken right now and will use a lot of rosemary for it. It was almost dead when we moved all three basil and a big pot of rosemary to the front yard. Apparently, they liked the move and have started to grow all over again. I got the most harvest out of the basil plants last week than I did all summer when they were in their old place. I guess I need to rotate where they live once in a while. I have a large cookie sheet lined with basil drying on top of my kitchen cupboard right now. When it's dry, I put it in my blender and then I have a nice bunch of dried and aromatic basil. It is much stronger tasting than the store bought dried basil. I will dry some rosemary a bit later. Those I don't put in a blender since I like mine removed from the stem and then stored in a jar. I like the "spikes" whole. Not sure what they are called.
