Cheap & Cheerful Suppers for a Very Chicken-y Week

I was thawing a whole chicken over the weekend and roasted it on Monday. One whole chicken yielded 4 family dinners, leftovers for 3 days of lunches, and extra stock for the freezer -- all delicious. However, I'll now be glad to have beans, canned tuna, and beef for a few meals. What are your favorite ways to use leftover cooked chicken?

Shopping this week
I stopped at Walmart twice since last week. Last Friday (day before Valentine's) I went to Walmart to buy some chocolate candies for my family for Valentine's day. As I had to pass through the produce section, I stopped to see how the strawberries looked. They actually looked very good for February strawberries. I bought 1 pint. So at least if I'm going to impulse buy something, it;'s the smallest of what Walmart offered. I spent $1.97 on that pint of strawberries. And yes, they were very good for commercial strawberries.

This morning I needed a couple of items from Walmart -- laundry detergent, ibuprofen for my husband, milk, and bananas. The milk and bananas cost $4.37.

So for this week's shopping I spent a total of $6.34. That feels a lot better than the almost $200 from two weeks ago. Our fridge and freezer still has a lot of produce to use. I won't shop again until at least the fridge looks more bare. It could be my big spend a couple of weeks ago was because I simply bought a lot of food.

  1. I am rather surprised at how many meals you got from one chicken! That's impressive. We had a lot of leftovers to consume during our week. But that is how it works around here. Cook a lot or enough on the weekend so that we just warm up what sounds good during the week. We had Lomo Saltada on Monday with enough leftovers for us and our two adult children that had supper with us so that was 8 meals. Chicken cutlets, homemade french fries, for another two meals. Vegetable soup with mini meatballs for lunches and even a dinner. Copycat KFC chicken bowls one night. We are officially out of "premade" meals but it's Friday and the weekend is here to it starts all over! Homemade pizza tonight.

      This was a large chicken, IMO. Your meals sound delicious. With your KFC bowls, do you use baked chicken, not fried? I think my family would enjoy those.

  2. I agree. That is a lot of meals to get from one chicken. If it were just me, most of the chicken would end up as part of a dish, but my husband likes meat and tends to eat most of one as just a piece of meat. We occasionally freeze chicken to use in a dish another time.

      Freezing some of the chicken would have been a great idea this past week. Some times I tell family to just slice some off for sandwiches for their lunches. And in those cases, we do go through a whole chicken faster.

  3. I haven't roasted a chicken in a few years, so I don't often have leftover chicken. We mostly use turkey in place of chicken in things like casseroles and soups. Speaking of which, I made turkey barley soup tonight (winter has returned in our area, with cold weather and rain/snow).

    I had an oops moment a couple of nights ago. I added too much water to my overnight-rise pizza dough, so I winged it and came up with essentially another batch of dough. I used the extra to make bread with--I don't know what I'd call it--I popped the dough into a 13x9 pan, with melted butter/garlic salt/grated parmesan, and baked it. It's quite poofy bread, so I cut it into wedges. Maybe I should call it bread wedges? Definitely a hit, and if I had to make a mistake, this wasn't a bad one to make. We had it both with the pizza (talk about carb loading!) and again tonight with the soup.

    I made heart-shaped shortbread cookies the week before Valentine's Day. I had leftover icing that needed to be used up, so I tinted it pink and purple and my daughter and I had fun making the cookies. They were not very neatly done, but they got eaten. :)

    1. Hi Kris,
      Were you bread wedges in the 9X13 more flat than loaf-like? If so, I'd call it focaccia. I did that recently, added too much liquid to a batter. I would up doubling the batch. When I'm trying to make 1/2 a recipe, I sometimes forget to halve all of the ingredients, and then I wind up making the full recipe afterall.

      I love the sound of your pink and purple iced Valentine's hearts!
