Oh my goodness -- is this ever a week for zucchini abundance!

I am working hard to stay ahead of the zucchini crop while ensuring my family enjoys the many ways I find to use it all. And what a delicious way I found this past week. Today I share my recipe for Zucchini-Apple Crisp.Ingredients:
fillingabout 3 cups zucchini, cut in half lengthwise and sliced 1/8 inch thick (this is 1 medium zucchini for me)
about 3 cups sliced and peeled tart apples (I used 2 Granny Smith apples)
3 tablespoons lemon juice
2/3 cup granulated sugar or brown sugar.
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 to 3 teaspoons of your favorite thickener: arrowroot, cornstarch, or flour
crisp topping
3/4 cup all-purpose flour
1/2 cup rolled oats
1/3 cup packed brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup room temp butter, cut into small pieces
Preheat your oven to 350°F (175°C) and grease an 8-inch or 9-inch square or round baking dish.
Filling: In a large bowl, mix the diced zucchini, apple slices, lemon juice, sugar, cinnamon, nutmeg, and thickener until well coated. Transfer to the baking dish.
Topping: Combine the flour, oats, brown sugar, cinnamon, and salt. Break the butter into the dry mixture using the back side of a mixing spoon, then rub into the mixture with fingers until it looks like coarse crumbs.
Sprinkle the topping evenly over the fruit and zucchini mixture. Bake for 40 to 45 minutes until the top is golden brown and the filling is bubbly and tender.
I was skeptical when I first set out to make a fruit dessert using part zucchini. I could totally understand anyone else thinking this is just too strange. But honestly, we all really enjoyed this one. The taste profile that comes forward is the lemon and spice. This tastes like September!
Infomercials try to convince you that you have a deep need for their life-changing product, and that you'll have to part with some of your cash to get it. Today, here's an answer to a problem that doesn't cost a cent.
Finding recipes that help use up garden abundance feels like solving a tough puzzle. We plant our gardens with plans to use it all. But then some veggies do really well, while others do poorly. The result seems to be an overabundance of at least one vegetable every year. My family can only eat the same veggie so many days in a row. Mixing apples with zucchini changed things up enough that my family was genuinely happy to eat more of the summer squash. For this week, the problem of too much zucchini has been solved. For me, that's part of being a good steward of our resources.

It's my youngest daughters birthday today. And I made a chocolate birthday cake for one of her birthdays when she was little and it was a big hit in that it looked good and the chocolate frosting was scrumptious UNTIL I told them it was a zucchini chocolate cake! She was horrified and wouldn't eat her birthday cake. We have laughed about it later and she acknowledges that she was not being fair and would happily eat a zucchini chocolate cake today. I'll ask her in the course of the day today and part of our long distance celebration today! I love zucchini in any form--zoodles, saute, zucchini quick bread, cakes, stuffed, cheese and tomato on the top. But dad's gone and so is the garden so I haven't had a single one this season yet.
ReplyDeleteHappy birthday to your daughter, Alice! That's funny about your daughter from when she was younger. I feel badly for her then self, as she missed out on a delicious cake. My own kids had a food refusal or two of their own that they now regret.
DeleteFor zoodles, do you have a spiralizer or some sort of cutting tool? I sometimes saute zucchini and ladle spaghetti sauce over the cooked zucchini. It makes a nice, light meal in place of traditional pasta and sauce.
If you lived near me, I'd be sharing my zucchini abundance with you.
I've made a similar crisp, Lili, and it was delicious, but I didn't add apples. I think the key is the acidity of the lemon juice. Zucchini is neutral enough in flavor to absorb the flavor of the lemon juice.
ReplyDeleteHave you tried zuccini boats? They are similar to stuffed peppers, but perfect for those occasional zucchinis that hide under the leaves and suddenly get huge. I made them last week (why yes, my husband did have one that got away from him!). I think that's what Alice is referring to when she mentions making and eating them stuffed. Great minds think alike. Lots of online recipes for them, if you are interested. We learned about them a few years ago while vacationing in Wyoming. The owner of our rental had a huge garden and she had more zucchini than she knew what to do with, so she gave us a couple, and told us about the boats. It's a great way to use up a lot of zucchini at once.
I'm with Alice--and she reminded me of my mom's chocolate zucchini cake, which was ohhh so good. We're having a pretty good zucchini year this year, which hasn't always been the case. DeleteI'd forgotten about stuffed zucchini. This is one of my daughters' favorite ways to have zucchini. What do you like for a filling in your zucchini boats? I've done bread crumbs, herbs, and Parmesan cheese before that was pretty tasty.

DeleteThis is the recipe that I use, but I think you could go a lot of different directions with the filling for the boats. I need a fair amount of protein to feel satisfied, hence the sausage, but I think you could use cooked lentils with herbs in the filling if you wanted something vegan or vegetarian.
I’m jealous! For some reason, we cannot grow zucchini or yellow squash without the borers getting to them first. We’ve tried all kinds of “remedies” to no avail :(
ReplyDeleteSince zucchini is used in many sweet dishes, I can see how it might do well in a crisp. But I’ve never heard of it. If I ever have an abundance of zucchini I’ll be sure to try it! And for comparison, the cheapest I can buy zucchini here is 1.29#
