Blessings where you don't expect them


Lately, I've noticed a lot of blessings in circumstances that I normally would find annoying, at best. Yesterday was one such case. I bought another 25 lb sack of carrots. I was tired at the produce stand, and didn't inspect the bag very well.

When I got it home, I was disappointed to find a lot of broken or cracked carrots. Well, with those carrots that won't keep very long, I peel and chop them right away and pack for the freezer.

While my daughter peeled, I chopped, and I chopped and I chopped. And I was thinking, "what a blessing this is, to be forced into doing this prep work right now. These frozen, chopped carrots will make dinner prep on busy days, so much easier."

Three good-sized bags of chopped carrots sitting in the freezer. I'd say that's a blessing where I didn't expect to find it.

      There are times when I see the blessings more readily than other times. This has been one such time. And I am grateful, now, to have these already chopped carrots ready for cooking with.

      I really do realize how fortunate I am to have helpful kids. I sometimes wonder where they came from, as I remember my own young years, and what a real selfish jerk I could be.

  3. Awww... I totally agree with Kris - blessings are in the eye of the beholder.

    There are some days when I curse the fact that I have food allergies, but most of the time I'm able to see it as a gift, because if it weren't for the allergies, I'd probably still be blithely sailing along eating the typical "American diet" of processed food and other stuff that's really not very good for me.

      I feel the same way about my own food allergies and intolerances. And my family is the lucky beneficiary of the fall-out from them, as they wind up eating far healthier than if I could just buy mixes and frozen meals.
      You may not realize it any more, because it's been a while since you changed your eating, but you probably have a lot more energy and feel better overall, than when you were eating what many Americans consider a normal diet.

  4. I think the saying, "When life gives you lemons, make lemonade," applies here. Or maybe I should say, "When life gives you bad carrots, make frozen carrots." Wow, that's really bad. I bet your are groaning as much as I am at that poor attempt at humor. :)

      My natural instinct is to grumble about the lemons in life. But I'm trying very hard to find or make the lemonade. And I am really glad to have the frozen carrots all peeled and chopped. They'll come in handy for several dinners.

  6. Hello Lili! Those carrots will be delicious! I am seeking the weekend as a blessing. Monday, my husband was admitted to the hospital with chest pains. It was not a heartattack or blockage. Wednesday, I had to pick up my 6 year old at school, because he had a stomach bug. Then, for the remaining part of the week , I had my grandbaby....so today after 6pm has been such a blessing. ..lol!   8. Do you blanch your carrots first? I do so with most vegetables but wondered if you didn't have to for carrots.

      No, I don't bother with blanching carrots. We usually use them within a couple of months and their quality in cooking is fine. Here's an article on freezing unblanched carrots, if you're interested:
