Using kale when it begins to flower


When kale is about to go to seed, it develops these tiny florets, little clusters of buds. Kale florets are completely edible. They look a lot like tiny broccoli.


In fact, they look so much like tiny broccoli that my family always mistakes these for broccoli.


I just let them think what they want to think. So, Thursday evening, we had "broccoli" quiche.

  1. Haha! Sometimes less information is best. My hubby often says "just don't tell me what's in it". As long as it tastes good they don't need to know!

  3. Many leafy vegetables get more bitter as they start to flower. Does that happen with kale? But it might be hard to tell because young kale is bitter all by itself. :)

    1. Hi live and learn,
      kale florets aren't very bitter, in fact the kale florets are milder than broccoli rabe. So for us, not a problem at all. I've used kale florets in stir-fries and pasta salad without a comment.
