This week's lunch round-up: another busy week

On Monday, I did a lot of cooking and baking. My week to come is a busy one, with picking blackberries, making jam, making pickles, harvesting and drying herbs, cleaning out 1 freezer to defrost, getting all the quilts and comforters washed/dried, and more. So, I decided to do as much cooking for the week as possible on Monday.

Some of the lunch round-up items are actually leftovers from Monday's dinner, just making everything that much simpler for me. Here's what's on the lunch menu at our house this week:

  • bean burger patties (there's rice and gravy to go with these, for the family members with a fridge at work)
  • creamy cucumber and dill salad
  • blueberry muffins
  • garlic bread
  • garden vegetable medley (tomatoes, summer squash, onions, garlic, herbs)

  1. Did you cook your garden veggie medley or is it raw?

    1. Hi live and learn,
      The veggies were very lightly sauteed in oil. We had them hot with dinner on Monday, then yesterday and today, they've been put into containers with a drizzle of Italian salad dressing, to be eaten cold. It's my daughters eating the veggies, and they don't have a microwave handy at work, so a cold medley it is! I'll be making this again next week, as it's been a hit.

      just trying to get everything done. This is always a very busy time of year for me, now through late September. Hope you're enjoying these last days of summer vacation!

  3. When was I invited again for lunch? ;)
    It all sounds so wonderful! I haven't found the right bean burger recipe yet. I am always experimenting. I am going to try the rice and gravy soon. We ate it mostly on home made hamburger buns.
    My weeks are full with preserving the harvest too. I have bought a lot of tomatoes and making plain juice for easy use during the winter.
    Unfortunately our blackberry and also our elderberry season is over already, about 3 weeks early. I still have pumpkins to preserve and hopefully some green beans and quinces.
