Early November lunch round-up

Much of what I made for lunches this week was either made Sunday evening (the baking) or were leftovers from Sunday and Monday's dinners. I've been preparing a little extra 2 nights in a row, to provide enough leftovers to get through several days' lunches. I did spend part of Monday afternoon making the pudding cups and zucchini bread and cream cheese sandwiches. My family really enjoys the ease of opening the fridge and choosing from this selection, according to what sounds appealing to them. And I like not having to think about lunches for the week, after I finish making up the selection each Monday.

  • apple chunk muffins
  • cornbread
  • Asian-style turkey-tofu-noodle soup
  • bean and veggie burger patties
  • baked apples
  • "zucchini" bread/cream cheese sandwiches ("zucchini" is a tiny, under ripe pumpkin, peeled and grated)
  • homemade chocolate pudding cups

Have you noticed the ads for Christmas yet? I know it's now November, and all, but I'd like to postpone thinking about Christmas for just 1 week.

  1. My kids and I were given our parts for the Christmas program at church before Halloween, which I thought was rushing it a bit!!!!!!!!!!!!! Yes, it's everywhere in the stores. I try to tune it out--which I can with decorations and items for sale, but once they start playing the music of the season, it sticks in my head.

    Apple chunk muffins sound good!

    1. Hi Kris,
      driving home last night I noticed one of our neighbors have some of their Christmas lights on! I am not at all ready for the holiday season. Maybe next week I'll be able to move in that direction. Our church has been working on their Christmas program for about a month now. I understand that it takes a long time to get it all put together. Just have to accept it!

    2. Could your neighbors lights be left from Halloween? One of neighbors has Halloween lights still up in their bushes.

    3. That's possible, live and learn. None of us noticed these lights being on/up until Tuesday evening, though. And they're the icicle lights. One of my daughters said she saw a lighted Christmas tree in someone's living room window a week ago. I guess, though, we never know what's going on in someone else's life. Someone could be celebrating Christmas early due to upcoming deployment, or something along those lines.

      It appears that they are indeed Christmas lights. They now have several more strands up and a large Christmas tree in the living room window. I feel like a Scrooge in comparison!!!

  2. Your zucchini makes me think of Ma Ingalls' apple pie. :-)

      I did once make a pumpkin "apple" pie, after the Ingall's one. My family was only mildly interested in eating that pie. I guess Ma's pie was probably a lot better than my attempt! Do you have the Little House cookbook? I bought that when my kids were young and we made many of the recipes inside. It was a fun thing to add to our reading curriculum.
