Cheap & Cheerful Suppers for the week before Christmas


Friday
One daughter was with friends all day, the other was with me, Christmas shopping. We covered a lot of territory in one day, and I managed to finish all my shopping. However, we came home much later than I had anticipated, and needed to throw together a speedy dinner.
  • leftover pizza for one person
  • hot dogs, with cheddar and salsa in a flour tortilla, for the rest
  • canned green beans
  • canned pineapple chunks
Saturday
I worked at a fundraiser luncheon for the day. The lovely ladies, there, always bless me with food to take home. Once home, I made a soup from leftovers in the fridge, and served the rest of our blessings from the luncheon to go with it. 
  • bean and veggie soup
  • assorted sandwiches
  • tossed salad
  • fruit salad
  • chocolate cake
Sunday
We're decorating the Christmas tree this afternoon into evening. Our family still all gathers together to put ornaments on the tree and have a simple, snack-y supper.
  • grape tomato and colby-jack kabobs
  • veggie tray and dip
  • crackers and cream cheese/herb spread
  • smoked almonds
  • nuts bars and brownie cookies
  • orange segments
  • tortilla chips and salsa
  • cola
Monday
  • turkey and vegetable soup from the freezer
  • baguette slices spread with a mix of leftover salmon spread, leftover Ranch dip and some cream cheese
  • Swedish rice pudding
Tuesday
  • homestyle macaroni and cheese
  • cole slaw
  • carrot sticks
  • fruit salad of banana, canned pineapple, tangerine and orange
Wednesday
  • turkey in gravy from the freezer
  • baked potatoes, topped with sour cream (for most of family, mine just plain)
  • canned peas and green beans
  • orange wedges
Thursday
  • French dip sandwiches (using roast beast given to us last weekend, and kept in freezer), on
  • homemade buns, with
  • homemade onion soup as the au jus
  • oven fries
  • sauteed cabbage
Such a busy week! Are you about done in, too? I've relied heavily on home-prepared foods from my freezer, and simple sides like cole slaw, carrot sticks, canned vegetables and orange wedges. 

What was on your menu this past week? Did you have to take more shortcuts, in meal prep, than usual?

  1. Merry almost-Christmas, Lili! You said the magic words for me. Home-made macaroni and cheese! :) Looked like another delicious (and blessed) week of meals. How wonderful to be the happy recipient of the leftovers from the luncheon, and to have such yummy resources to draw from in the freezer!

      Merry almost-Christmas to you, too! My other blessing in the kitchen has been to have my daughters around to pitch in. Many nights I couldn't have managed without them.

      I hope to never eat boxed mac and cheese again. But home-made is a different thing all together. So yummy, isn't it?!

    Your meals sound so good. Kristi surprised me with one of those all inclusive food boxes with 3 meals so I did
    not have to shop this week. She got a deal on Groupon because they cost too much. I was so excited when it got here they ship it with lots of ice. Such a sweet thought:) However each meal had 1,2 or 3 of the items
    spoiled. Slimy Arugala and packaging on the salmon puffed up that did not look safe. So I used what I had here to sub and used there recipes and it still worked
    out I had salmon in the freezer and lettuce that was still good. I finally called the company and they credited me for a new box 2 out of the 3 meats were off. So I will get to try it again. Maybe next time it will be better. So I did not go to the store Ya! We also had Meatloaf with mashed potatoes and rosemary. Salmon Salad,Braised Chicken with a roasted veggies, Sausage veggie soup, and way too many cookies. It was
    a wonderful relaxing week. We had enough cookies from the cookie exchange to eat too many and give lots and
    lots away. We watched Christmas movies and ate cozy
    dinners. It has been a real blessing to enjoy this time of year. I will bake pies as that is what they would like me to bring to Christmas dinner. I think we will have soup for dinner again tonight. It is easy
    and uses up those not so perky veggies.
    I still need to wrap up my nieces gifts. That should
    be easy Kristi located The Christmas wrap and the bags.

      Good job in calling the company with the meals. I think that's not only good for you, but also you're giving the company a chance to redeem itself and improve their service. I hope they do much better in your credited meals.

  3. Oh yes. Tis the season of simple meals. I think I used the last of our frozen grilled burgers as an easy re-heatable dinner. Plus, my hubby made pork loin on Sunday and we resurrected that later in the week. The meals I actually cooked were heavy on chicken--yesterday was chicken thighs in a honey/soy sauce in the microwave, with rice, green beans from the freezer, and fresh pineapple (hooray for Aldi's sales!). Earlier this week was chicken breasts in a yogurt/buttermilk/honey sauce. I had honey that was crystallizing and hard to work with but is great in dinners like this. Tonight I am having a date with hubby! We are leaving the kids with my mom for the night and enjoying a meal at our favorite restaurant. Typically our dates are lunch dates so this is unusual for us.

  5. Your quick, simple meals sound great. No one should ever get tired of eating the same thing at your house as they are always varied.

  7. Merry Christmas and best wishes for the new year!!

    I'm actually excited to ring in the new year. I have turned a few screws in my head, after some introspection, about how to bring more peace and happiness for myself, and consequently others in my life. This was the year for some major healing, and I think I'm done, at least I hope. So I'm ready!
