Cheap & Cheerful Suppers for Easter Week (that means a ham featured heavily in meals)


Friday

  • scrambled eggs
  • brown rice
  • oranges
  • carrot sticks
Saturday (husband cooks)
  • rice and lentils, sort of curry
  • carrots
Sunday (husband cooks, we had our ham meal at lunch)
  • tomato-lentil-carrot soup
  • fried corn tortillas
Monday
  • leftovers from Sunday, ham, mashed potatoes, sweet potatoes, and green bean casserole
Tuesday
  • leftover ham, mashed potatoes and gravy
  • sauteed spinach and onions
Wednesday
  • leftover ham
  • sweet potato chunks
  • French bread
Thursday
  • ham and lentil soup, with red and yellow sweet peppers, onions, ham stock and seasonings
  • drop biscuits
  • orange wedges
Hi, there! I'm sorry I wasn't around yesterday. I am in a huge time-crunch this week, and through the weekend and early next week. I lost a day and a half of work-time in the past week, due to waiting half a day in a parking lot to be towed to a car repair, and then Easter with the family. I'm not sure I've ever felt this busy. Maybe when my twins were infants and I had a 7 year old in the house, too. I just barely managed to get meals on the table. But I'm managing. What did you manage for meals this past week? Anyone not have ham? If you didn't do ham for Easter, what did you choose?

  1. We didn't have ham, but did have a delicious turkey and fixings meal with my mother at her nursing home. The hospital (attached to the nursing home) is known for it's good food and this meal did not disappoint.

    Good luck with all of your deadlines. Don't forget to stop and breathe then and again.

      That sounds like a lovely meal. And what a selling point for a nursing home, too. It's nice to know that in many ways your mom is well-cared for there.

    Life is good! Even when you're busy!

    We did have a ham and I froze the sliced pieces in three packages. We had a little bit out for munching but we've already eaten one of the frozen pkgs. We had two boxes of scalloped potatoes and those were gone at the Easter meal and frozen green beans that I only had a small handful left after the meal. I chose to add meatballs (from a pkg, frozen) and I had only a few left. We had homemade dinner rolls that we had some leftover that I froze and a lemon dessert.

    Monday was the soft tacos
    Tuesday chicken Mansaf
    Wednesday was leftover chicken mansaf and pasta salad for me
    Thursday was chicken noodle soup using a watered down ham broth so it wouldn't taste hammy.
    Tonight hubby wants sizzle steak sandwiches (remember sizzle steaks?)

    I'm sure sizzle steaks are terrible for your health but once in a while he wants to walk down memory lane of his youth and this is something that he fondly remembers. Why should I deny him that? Nope, if he wants that once in a while then he should have that! Since I only have dinner rolls, that will be our bun.

      Sizzle steaks sounds vaguely familiar. Was this a packaged frozen item? And did you find them in a store or are you recreating them? Homemade dinner rolls are the best. I bought some brown and serve rolls for New Years this year, and thought they were terrible, compared to homemade. Enjoy your dinner! and have a great weekend!

  3. Yes, it is a packaged frozen item. It basically is a thin hamburg patty between two thinly sliced beef. Just fry them up in a pan three minutes or so per side and you can eat it like a sandwich or sometimes as the meat portion of a potato/veggie dinner. I like mine with cheese like a philly steak sandwich.

  4. We didn't do Ham for Easter, and right now I can't recall what we had. LOL...We did have a good week though, so that's good. I hope you have a good weekend too. :)

  5. I bought a ham on sale to have for later, but we had turkey and all the fixings (mashed potatoes, gravy, cranberry sauce, dressing, asparagus, fruit medley, rolls) for Easter dinner. So it was turkey leftovers, in many forms, for us this week. We did take a break from turkey and had steaks from the freezer yesterday, before my husband rebelled!
