Cheap & Cheerful Suppers for Early May


Friday (Cinco de Mayo)
  • beef and bean burritos (using leftover pot roast from the night before, black beans, cheese, and salsa that was a Friday Freebie a month ago)
  • grape tomatoes
  • tangerines
 Saturday (husband cooks)
  • scrambled eggs
  • rice and lentils
  • canned tomato
  • strawberries and banana slices
Sunday (husband cooks)
  • noodles in peanut sauce
  • fried carrots and onions
Monday
  • kale and mushroom frittata
  • brown rice
  • sliced strawberries
  • rhubarb pie
Tuesday
  • lentil, ham and kale soup
  • drop cheese and green onion biscuits
  • rhubarb pie
Wednesday
  • hot dogs in home made buns
  • sauteed kale in ham fat, blended with oil
  • rhubarb sauce
  • baked beans
  • brownies 
Thursday
  • roast pork loin with gravy
  • plum chutney
  • oven-roasted rosemary potatoes
  • asparagus
As you may have noticed, some spring fruit and vegetables showed up on my menu this week -- kale, rhubarb, green onions, rosemary, and asparagus. Not all of it grew in my garden, but having spring foods does perk up the menus. I've been working in the garden this week, and now I eagerly anticipate its bounty.

Sunday is Mother's Day. I want to wish all of you mothers a wonderful Mother's Day. I hope that you celebrate in a way that is meaningful to you. Does any one have any favorite things that they do on Mother's Day?

  1. We had another slim week in the food department. We're still emotionally wavering but it's getting better. One day we had chicken paprikash with leftovers the next day. We had a pork steak in the pressure cooker with broccoli and corn on the cob. Also a day of leftovers from that. Another day was taco salad though hubby wrapped his in a tortilla. Another day I got an email from Panera about a reward that was to expire. It was a Get2 meal. I had to order it from my phone app and was able to order two sandwiches for pickup. I'm glad I didn't have to order a salad or soup as the 2nd choice. So we had those the next day for lunch. I pack a lunch everyday so this was a nice change.The bill was over $10 all for free! I will do that again when offered a freebie! We had plenty but mostly the meals were last minute thrown together types. Tonight is up in the air as Friday's always are.

    For Mother's Day we always buy our mothers a hanging basket and this year we're taking MIL along so she can pick her own. My kids don't buy stuff for me for mothers day and often even forget. They are right in the middle of exams anyway so I don't want them to have the distraction of having to do stuff for me. I will make dinner and hopefully it will be warm enough to eat in the porch. I never know who's coming but I think MIL will come. I make enough and then there are leftovers to start the week.

    1. Hi Alice,
      How wonderful that you were able to use the Panera reward. So often, there will be a reward, but it's just not the right circumstances to go get it. So I'm glad that worked out for you. I have a birthday reward of a pastry to use still, as does one of my daughters. If she gets home from her class early enough we might go over there together. I can get a couple of other errands in at the same time (our local mall is somewhat near Cash & Carry).

      I'm not sure if we're doing anything for Mother's Day, here. No one has said anything, and like you, my kids are busy with things related to school. That'll be lovely to take your MIL to choose her hanging basket. I was in the gardening section of the store yesterday and there were a couple of ladies choosing hanging baskets. I have a basket that need planting. Perhaps I'll choose some flowers/plants for it this weekend.

  2. Happy Mother's Day to you! We don't typically do much of anything, as our wedding anniversary is in April and my birthday is always a week or so before Mother's Day. This year, though, I'm hosting a brunch. My brother called and suggested taking mom out for lunch after church. We just did that for her birthday a couple of weeks ago--plus, I dislike restaurants on those kinds of holidays--they seem overcrowded to me. I'm keeping brunch simple--I'm trying an egg casserole, I'll have heat-and-serve sausages, I'll bake some sort of coffee cake or muffins, my brother/S-I-L are bringing a fruit bowl, and we can have tea and coffee. Hopefully it will turn out ok. We are also going in on a hanging basket for her balcony. I feel like my M-I-L gets the short end of the stick, but they live far away so it's very hard to do much. Hopefully they will visit this summer and we can do something special then.

  4. After a long week, we decided to take an impromtu trip to my uncle's farm. I had an appointment before we could leave, so I had the kids pack everything we would need for an overnight trip.

    That night at the farm, we served a baked ziti with Dreamfields noodles that I had stashed in the freezer, as well as a Texas sheet cake that had been in the freezer, a salad & I picked up a take & bake pizza at Fred Meyer before we left (I used my Rewards check to buy it).

    On Saturday, our family visited a railroad museum. We packed sandwiches before we left the farm. We ate our lunch in the van before we went into the museum. We had anticipated paying more for the admission than we were charged, but my husband said they gave us a "group" discount :)

    The museum had advertised that children 5 & under would get a golden railroad spike, but all of my kids received one. The kids were really happy with their spikes. This made me feel much better about the firm "no" I had given them about buying anything from the overpriced gift shop.

    We normally take a couple from church out for lunch at a cheap (but good) Mexican restaurant for Mother's Day, but we decided to have them to our house for dinner on Sunday instead. More work than I wanted for myself that day, but the family pitched in and we had a nice meal.
