Mug Cakes to Go


A little impromptu "picnic" in the mall's food court over the weekend necessitated the making of a super quick, scratch dessert -- mug cakes in mason jars. I mixed the batter in a bowl and divided between 4 small mason jars. Next, I microwaved for 1 minute. Screwed some lids on and we were set for dessert. Yum! Along with sandwiches and bananas, we had a nice little lunch all packed in under 10 minutes.

The food court at our local mall has lots of tables, some near a large fireplace, others up against large windows. It makes a nice place to take a "picnic" on a cold, winter day. Afterward, we did a little window shopping and got in a good walk. Malls are also great places to go for a walk when its cold or rainy outside. Just leave the credit cards at home.

  1. You have such creative ideas! I occasionally make mug cakes but never thought to transport them for a picnic. Wondering if malls in your area are doing well. Many of our anchor stores have gone out of business and I think the online shopping phenomenon is hurting our local mall--which is too bad, as it's a newer building and a nice place to walk in the winter.

      Thanks. I have my daughters to thank for the idea of using mason jars for transporting packed lunch items. They prefer the canning jars over plastic containers. So, the idea to do mug cakes for a group lunch, and use the canning jars to microwave is inspired by what they do for their lunches.
      You know, many of our mall stores are struggling, to. For us, it's the small stores. All of my favorites just seem to go out of business one right after another. There are several vacant storefronts right now, and ours, too, is a newly renovated space. But, for the most part, I don't buy much at the mall as I can get the same things for less elsewhere. I do like to window shop and walk there in winter.

  2. Sounds like a fun picnic. Our malls are going out of business, also. And they aren't very safe these days in our area. That combined with the fact that there are none close to me, leaves them out as a good place to visit. I wish that were different because they are a good place to walk. Instead I walk the aisles in grocery and big box stores when we visit. That can prove difficult at times if there are very many shoppers, but it's better than sitting on the couch or freezing outside in the cold and wind.

      I'm sorry to hear that the malls in your area are no longer safe. Our own mall has had a couple of small incidents, but nothing significant, so far. However, a large mall to the south of us did have an incident this past weekend, and that would surely put me off from going there, even though the "incident" turned out to be something of a prank. Why anyone thinks that sort of thing is funny or entertaining is beyond me.
      Our mall has several stores which have gone out of business. Kind of sad. But many shoppers have changed how they buy what they need. I think walking in grocery stores or warehouse stores sounds like a good alternative. Maybe go in the off hours?

  3. Great idea! I made banana bread in jars many, many years ago. The closest mall from my home is 30 minutes, the local high school, which is 5 minutes away, allows the public to walk certain sections of the halls during the evening hours. This is in conjunction with the local ymca in our area, it's nice to be able to do a few laps with friends, catch up and get some exercise in all at the same time.

      That's great that you can walk the halls at the local school in the evening. I think more schools should follow that example. I do know that many people in our area run and walk the outdoor track at the local middle school during the summer months. We just need more winter places to walk.
