My Favorite Way to Eat Soy: Chocolate-Tofu Silk



For 4 small portions (this is rich):

1 cup of semi-sweet chocolate chips
7 to 8 ounces of tofu (silken is smoothest, but firm has more protein)
1 teaspoon vanilla extract
1 to 2 tablespoons honey
1 tablespoon of milk

In a microwave-safe bowl, melt the chocolate chips.

In a food processor, process the tofu until smooth. Add the vanilla, honey, and milk, then process to incorporate. Scoop the melted chocolate into the food processor and blend with the tofu mixture.

Spoon into small dishes, such as custard cups. This can also be layered in tall cups with fruit or fruit filling (such as cherry pie filling), cookie crumbs, or cake cubes for a parfait. Or, a double batch can be scooped into a pre-baked pie shell and chilled.

Garnish with shaved or chopped chocolate. Refrigerate for 2 hours.

Chocolate-Tofu Silk will likely be on our Valentine's dinner menu, in some form, with berries, if the budget permits.

  1. This sounds really good and I just got some tofu. I had something more savory planned, but now I'm going to rethink it.

  2. Mmm, that looks good! I've never ate tofo, I've seen it in stores and a few of my friends and relatives are vegetarians, they eat it-I'll have to try it.

    FYI - (from yesterdays post) I tried plain tea with vanilla extract - added about a cap full (I don't have measuring spoons at work - haha), anyways...the tea is really good, tastes just like the name brand. I was looking up the calorie's in vanilla (gotta try and keep my girlish figure!), I never realized what imitation vanilla was made from - GOOD GRIEF! If you're not sure - google it, I don't think I'll buy it again - REGARDLESS of the cost savings!

    I'm sorry to have derailed your healthy plans with chocolate! But if you do try this, I hope you enjoy it as much as I do. Last night, I filled 5 dishes with the stuff, even though only 4 of us were here. I had the 5th one for breakfast this morning and it was so good, and not at all like eating something desserty.

    I've been eating tofu for about 30 years now. I've found ways to use it in place of dairy foods that would cause me tummy trouble. Tofu makes a good substitute for cottage cheese in lasagna. It just needs a little seasoning to give it good flavor. Anyway, this dessert is delicious.

    I've read some about what goes into artificial vanilla flavoring. According to Wikipedia, about 15% of vanillin is manufactured from tree by-products, like resin and lignins and 85% is synthesized from petrochemical precursors guaiacol and glyoxylic acid. Maybe that sounds bad, but I figure the natural vanilla bean isn't always great, either, depending on where it's grown. It's good to know what goes into our foods and where they come from.
