A Leap Month of Little Joys and Satisfactions: Tasty Meals for the End of the Month

artichokes (marked-down produce -- 3/$1)

Thursday (other daughter's night)
cookout of hotdogs in buns and various salads (and no, it wasn't warm enough for a cookout -- we froze, but my daughter really wanted to have a cookout)


Wednesday's tuna and tofu sandwiches were quite good, and absolutely no one at the table noticed the tofu. (I used tofu to add protein while stretching the tuna.)

My mind is fried as I type this up. On Thursday, I woke up a couple of hours earlier than usual after hearing a plane fly over our house. We live near a small airport that just began commercial flights a year ago. The commercial flights are not supposed to begin for the day until 6 AM. This was around 5 AM that I heard a plane. It must have been one of Boeing's, which do occasionally fly at odd hours. (Boeing has a major plant near us (using the same airfield), and they run shifts around the clock.) I got up and didn't realize it was just after 5 until I was in the kitchen making coffee. Anyway, I'm just not functioning well.

It was a good week, although very busy. I'm making a large pot of chicken soup today, some to eat for dinner and some to freeze. Now that we've gone through most of the  blackberries that we foraged last summer, we have quite a bit of space in one of the freezers -- room for some homemade freezer meals.

  1. A cookout does sound fun! This is the time of year when most of us are getting eager for spring to get here. I took fresh strawberries (sale at Meijer this week) to share with my mom--it felt like a taste of spring.

    I think you are not alone in having a foggy brain today. I'm struggling to remember what we ate for dinner this week. I know we had a hamburger tomato soup with soda bread because we are having leftover soup for dinner tonight due to a time crunch with my daughter's band concert. There, that's 2 nights! Ummm, apricot chicken over rice. Pizza and salad. Oh yeah--Mexican skillet supper. Whew, I did remember!

    Lili, again, I appreciate your work this month at having daily postings! I will miss hearing from you every day but I'm sure it's an incredible amount of work for you.

  2. Yes, I can understand wanting a cookout! It's somewhat sunny here today, but windy and only a high of 45 degrees forecasted.

    Let's see if I can remember what we ate(definitely not in order!):
    Turkey meatloaf with mashed potatoes, broccoli, corn
    Corn tortillas with pinto beans and fixings, oranges
    Chicken sausages wrapped in corn tortillas, green beans, corn
    Marked down steak, baked potatoes, green beans, corn
    Tonight will be tuna cake sandwiches with lettuce, chips, raw carrots, oranges.

    Maybe you can catch a quick nap sometime today. Your chicken soup sounds yummy and comforting. Glad to hear you're getting some freezer space.

  3. Yes, I agree with Kris in thanking Lili for daily posts. I look forward to that each and every day!

    Isn't it crazy that we can't always remember what we ate this week? That says we have an abundance.

    Sunday was turkey and gravy with sweet potatoes and green beans and sponge cake with strawberries and whipped cream. This week we also had rice and teriyaki chicken, hamburgers and french fries with coconut red thai curry soup. Enchiladas with the eggroll in a bowl (the eggroll in a bowl was not a favorite). We ate more things but I just can't remember.

    Yum, strawberries! i can barely wait for fresh ones. I found a bag of frozen strawberries in the back of everything in the spare freezer. But frozen strawberries are just not the same as fresh ones. I am sure your mom really appreciated those.

    My daughter really wanted to have a cook-out in February, like really, really wanted this. Anyway, it was so freezing for me. Standing up against the fire I could still see my breath in the air. The temp was around 46 or 48 by the time we started the fire (everyone had to get home for the night). We may wait another few weeks before having another one!

    Apricot chicken sounds delicious! is this a crockpot recipe? As I mentioned, I've got a large pot of chicken soup going. I may make soda bread to go with it. Thank you for the idea!

    I feel asleep early last night! I feel much better today. I'm one of those people who just needs her sleep.
    Oh, brrr -- 45 for a high! when we were roasting our hot dogs, it was about 46 to 48 and very, very cold.
    Oh your menu for the week sounds yummy! For the tuna cake sandwiches, do you make fishcakes with tuna then serve them on bread or buns? This is such a great idea. I don't know why I've never heard of doing this before, but this would take tuna sandwiches to a whole new level!

    Your menu sounds delicious! what do you put into coconut red Thai curry soup? I have a can of coconut milk that I would like to use soon.

  7. Lili, how well you know me. Yes, the apricot chicken is a crockpot recipe--well, I've tweaked it as the original calls for orange marmalade instead. Nobody in my house likes orange marmalade.     We are mostly eating fruit out of the freezer (or old apples) but I couldn't resist the strawberries when I saw them!
