Homespun Holidays: Using What I Had for Memorial Day Dinner

Rainy day -- A cook-in with hot dogs in homemade, part whole wheat/part white 
sourdough buns. This sourdough is so soft and fluffy. The hot dogs were served 
with homemade relish, homemade ketchup, and commercial mustard.

sauteed radish greens from the garden with onions and garlic -- delish!
mashed potato, herb, and homemade yogurt (instead of sour cream) casserole,
 topped with melted cheddar

creamy rhubarb gelatin for dessert, made with cooked garden rhubarb, 
cream cheese, sugar, gelatin, baking soda (to reduce the sugar)

The four of us had a nice dinner, using just what I had on hand. I still haven't been inside a grocery store since late February.

The sourdough just keeps getting better and better. This is my new favorite bread. When I say it's light and fluffy, it's really light. The loaves feel so much lighter in weight than my yeast-raised wheat bread. Like they're full of air.

    1. Hi Live and Learn,
      this casserole was instant mashed with yogurt added in place of milk, onion powder, garlic powder, and minced chives, then topped with cheese and baked until the cheese was melted. The yogurt gave the dish some tang, which made it yummy.

  2. We also had a wonderful weekend with lots of sunshine and quite warm!

    I go to the grocery store weekly again and I can find anything. There doesn't seem to be a shortage of anything except meat. There is meat but not as much.

    We did a lot of yard work over the past few weeks so we didn't have a huge list of things to do on Monday. It was hot and humid anyway. We had brats and burgers using only one pound of 90/10 beef. We had homemade potato salad, coleslaw, baked beans. My mom gave us several jars of homemade relish so that has been popular lately. I sauteed up some onions for our dinner and that was very popular also. No beverages other than water.

    We were at a discount store called Daily Deals and found frozen boneless skinless chicken for a very good price. We bought two and I pulled a few pieces out for Sunday which we grilled. Those were very good. Also found a 5 lb. bag of sausage crumbles which was cheap and I divided those up into more usable portions in baggies. Finally we found chicken cutlets lightly breaded in a huge bag. We tried those out and they are nice also.

    Now we are back to working through the freezer which is nicely full and I'm grateful for that. The pantry is quite full and we will work through that as well. We spent more for food the last two months because we were getting low and this pandemic hit so we stocked up and filled our pantry and freezer. We're still not over this thing but still will shop only once per week.

      It sounds like a lovely long weekend for your household. Your dinner must've been delicious!

      When I check online for grocery pick-up, my local stores still has some shortages or items that are strictly limited, like canned vegetables. I've done 2 pick-ups, the last one 3 weeks ago. So, we are getting low on fresh produce again, but that's about it. I still have plenty to work with. It's the odd, non-food things that we're now completely out of, like bandaids, pain relievers, and some vitamins.

  3. Are you still in total lockdown in your state? We are at yellow, the only thing we have done is do some food shopping every other week and we have a doctor's appointment next Friday. We have had over two hundred cases and now 12 deaths. I feel safe enough to food shop but certainly not going out just because. No dining in a restaurant, no church for now, and certainly not rushing out in crowds.

    1. Hi Cheryl,
      my county is still in phase 1 of 4 phases. That means we can golf, fish, and get curbside pick-up for many retailers, but can't shop in-store at clothing stores and other non-essential places. No haircuts, no in-restaurant dining. We can use parks for walking/jogging, but no playgrounds, no sitting, no picnics. My county is simply too large and has had too much transmission to meet the strict requirements for opening. I believe we have to have fewer than 82 new cases in a 14-day span (this is based on population). We've had about 310 new cases in the last 14 days. Without our governor amending the requirements, I don't see us moving into phase 2 for several weeks, maybe not until the end of June or beginning of July.

  5. Wow, you went all out! We had leftover pulled pork that we reheated. Nothing too exciting. I made your microwave brownies as it's hot and humid here and we are trying to avoid turning on the air as long as we can. Looks like you had a fun family dinner!

      I set the table nicely and that made it "going all out", for us!
      Hot and humid, already? We're stuck in rain and chill. It warms to the 70s later this week, though.
      That brownie recipe is my all-time favorite for brownies, whether I'm microwaving or baking in the wall oven. They just have a great taste and texture, I think. I'm glad this worked for you and you could keep from heating the house. The pulled pork sounds yummy, too!

    2. I think it was 2 weeks ago that we had snow flurries. Now it's in the upper 80s. Definitely crazy weather patterns in our neck of the woods.

      I meant to tell you--I reduced the sugar to 3/4 cup in the brownie recipe and sprinkled 1/4 cup of chocolate chips on top. It gives them more of a dark chocolate flavor. I should have checked them about 30 seconds sooner than I did (I went with the lesser time) as I prefer them a little fudgier, but no one is complaining around here! Oh, and I also used oil instead of butter to conserve my butter.

    3. Those sound delicious! We've switched to all oil in that recipe, too. Gotta save that butter. I was surprised the first time that we used all oil -- we liked them even more!
