No more complaining

I really have to laugh at myself this week.  Two weeks ago, I was complaining to myself about running out of grocery money for the month of May. "How ever, was I going to cook and bake without any eggs in the house?"

When the calendar flipped over from May to June, I made a little note on my mental notepad to "pick up eggs". Well, here we are on the 5th of June, and I still haven't stopped in to a store to pick up eggs, or anything else for the month. I wanted something chocolate-y for dessert with tonight's dinner. At first I was stumped, lacking eggs, of course.  Then I remembered a family favorite that I haven't made in months -- Hot Fudge Pudding Cake, no eggs required! Just takes a little thought to find a way to improvise at times.
