I haven't done a Cheap & Cheerful post in a long while. I actually kept track of what we ate this week. So I'll share.

beef and vegetable (garden Brussel sprout greens and frozen Asian vegetable mix) stir fry
brown rice
tomato wedges (picked about 3 weeks ago and still ripening indoors)
fresh pears (harvested earlier this month, stored in fridge)
Sunday
bean and cheese burritos on homemade tortillas, with homemade salsa
avocado and tomato slices (our tomatoes, store avocados)
steamed carrots (store carrots, washing garden carrots sounded like too much work)
steamed broccoli (frozen from this last spring purchase)
Monday
chicken in gravy over scratch biscuits (I used lots of garden celery and sage in the gravy -- it tasted a lot like chicken, stuffing and gravy)
canned green beans (easy night after a long day working)
baked winter squash (garden grown)
fruit compote (our apples, pears, raspberries)
Tuesday
chili con carne topped with avocado chunks
scratch cornbread
stewed prunes (our prunes)
Wednesday (a very busy day and evening, so it needed to be easy)
leftover chili con carne topped with shredded cheese and cilantro
leftover cornbread
fresh pears and raspberries

Thursday

This was a heavy duty work week for me. I am very close to being done with the harvest and processing. This week I made all of the fruit leather, 120 portions, and 3 last jars of preserved spiced unripe figs. I finished pruning the one fig tree while I was picking the other day, too.
I took the easy route with vegetables on a couple of days, canned green beans, frozen broccoli, etc. I knew Wednesday was going to be a super busy day with a shortened dinner period, as my husband and I had a Bible study at our church this evening. Wednesday dinners are such a rush for us now. Our daughters are out until 6, but my husband and I have to leave shortly after 6. So my husband and I sit down around 5:15 for dinner, then leave food for the other two to reheat when they're hungry. Anyway, I made enough on Tuesday to mostly just reheat and serve.
I won't lie, I had many moments this past week when I considered having someone go out and get some burgers or a pizza. But I really don't like fast food burgers and cheap pizza any more. I like my own cooking. And it feels like it's better for me.

With different food sensitivities in your family, getting food out doesn’t sound like the best option. However, have you figured out what takeout food works for you if you wanted to get it? Live and Learn

DeleteThank you for asking. My husband and I were just talking about this the other evening. We have a few choices, Taco Time (a taco place that also does good taco salads), 5 Guys (who will do a burger for me wrapped in lettuce), and Panda Express or other Chinese or Asian. We used to have a Panera near here, but they closed during the shutdowns. It's not that I can't ever eat at other places. It's that I usually have a tummy ache afterward and I'm just not wanting to do that very often. We do go to an old burger place from the 50s in the farm area not too far from us, about once a year in the fall. But eating out is so expensive. We spent about $40 for 4 burgers and 2 orders of onion rings recently. For that price we can eat premium beef a couple of nights in a row.
We're not in a place financially where we can eat out often and be as generous as we'd like with our giving. We save most of our eating out for when we take vacations. And we are planning to take a nice trip sometime in winter.
Fortunately, my super busy time is winding down. For Wednesday evenings, when we're all here or there, I can double batch on Tuesdays and we just eat leftovers on Wednesdays. And everyone in the house helps by making one meal each on other nights. We're making it work.
What kinds of takeout places do you have in your area that you and your husband enjoy?

ReplyDeleteMy daughter was home earlier this week for her midterm break. She requested chili, so we had chili and cornbread for supper one night. I made a turkey kielbasa/white bean soup with rolls one evening, so we've been getting our share of fall meals! Last night I hit the easy button and made tacos. My husband made a delicious pork loin with apples meal (with squash as a side) over the weekend.
I'm taking a short trip over the weekend to visit a friend in North Carolina! We'll eat an early meal of leftovers before leaving for the airport. I haven't flown since our honeymoon 24 years ago, so this is an adventure for me.

Your meals have that autumnal sound to me, especially the chili meal and the pork, apples and squash one.
That's so nice that your daughter is close enough that she can come home for mid-term break. I bet she really enjoyed your home-cooked meals.

My cholestrol was still very high even on medication so I stopped eating almost completely at fast food. I say almost because when you tell yourself you can’t do something it makes it more attractive. In a given year, I eat fast food 8 times. This includes Mcd, Burger King, Pizza Hut, Taco Bell and Subway. I know the last 2 can technically be healthy but both usually come with ships which are still not great.
ReplyDeleteIn order to stop, I took food and a water bottle every time I left the house for about a year and a half. This gave me no reason to eat at fast food. It was hard because I had developed a serious habit. But my cholesterol finally came down.
I echo Linda's comment! I enjoy your menu posts because it motivates me to eat healthier. With our household just consisting of hubs and myself, it is a challenge for me to want to cook. In the past with 5 children at home, I loved it and I enjoy it when then all gather here, but the day to day cooking for the two of us is a chore. This week we did go to a place that has delicious reuben sandwiches. They are so large that it lasts both of us two days. Thank you for being a driving force that encourages me to cook for just 2!
