Cheap & Cheerful Suppers For the End of April

Friday
  • pancakes and syrup
  • last of the milk divided between daughters 
Saturday (quasi-birthday celebration for husband, we let him off the hook for dinner and daughters and I made it)
  • lentil-ham soup
  • drop biscuits
  • carrot sticks
  • orange wedges
  • birthday cake -- scratch, my daughters made it and it was delicious
Sunday (husband cooks)
  • homemade flour tortillas
  • beans and tomatoes
  • canned pineapple chunks
  • birthday cake
Monday
  • baked chicken breast
  • baked potatoes, topped with chives and cream cheese
  • sauteed kale
  • stewed prunes
  • birthday cake
Tuesday
  • hot dogs in bargain buns, from the freezer
  • oven fries
  • cole slaw
  • stewed prunes
Wednesday (only 3 tonight)
  • spinach frittata, topped with canned tomatoes, seasonings, mozzarella
  • brown rice
  • 1 orange, split 3 ways
Thursday
  • pumpkin, spinach, chicken, potato, black bean, cream cheese (and anything else I could find) soup
  • drop biscuits
  • stewed prunes
And we got through another week! You know, I've been feeling like it has been a very rainy and chilly year, since the first of the year. I was thinking maybe it was all in my head. Then I saw a report that said this has been the rainiest October-April stretch on record.  My cabin fever has escalated! I have no idea what this means for summer. The year that we had the longest stretch of snow on the ground in winter (3 weeks in front of our house, really unusual for us), we hit an all-time high temp in the summer of 103. Who knows what will happen this year. 

So, my last project is a video. I'm working on that this weekend, and will get it all done, I hope. We really need me to do some cooking and shopping again. Our meals have been on the slim side. What's been cooking at your house this week?

  1. Your slim meals still look varied, healthful, and delicious. Good luck with your final project. I know you will be happy when you have a little time to breathe again.

    1. Hi live and learn,
      I have ideas in my own mind of what constitutes a "slim" meal, I think. The most satisfying meal this week was the chicken breast, baked potato meal, because it felt like a "normal" dinner to me. I must associate having soup for dinner as somehow not a full meal. So maybe that is why meals feel slim to me. Maybe just too much soup.
      Thank you. I just wish I knew what I was doing with computer-related stuff. But that's exactly why I'm taking this class, so I can become more proficient with computer stuff that should be helpful in a job. Already life feels easier, now.

    Glad to see you back for a little bit. You sure are busy. Are you working toward a degree?

    Meals have been slim around my house lately because we've been trying to eat quickly before going on our 3.2+ mile walk without the full feeling and get it in before dark. Then this week I either have been hit hard with an allergy or I have a cold. I can't tell the difference. And that's the other reason we're eating slim--because I don't want to touch anything to contaminate it and food doesn't sound good at all.

    I'm calculating out my April budget and it is about $282.82 all inclusive so that's not bad. We had to buy some stuff for illness like gatorade (that stuff is expensive!) and a few other things I don't normally buy.

    I was hoping May would be warmer but I heard this morning that we're ending April on a cold note that will continue into the first half of May. That's disappointing. I would like some sunshine.

    1. Hi Alice,
      I'm over the hump, so to speak, and life should be much better now. Taxes are done, the car is working, the roof is finally repaired (the roofer had to come back out a second time, as it was still leaking after the first repair). I still need to do something about the damage from the roof leak, and we still don't have electricity in part of the house, due to the leak (yep, it was an insidious, between the wall, leak). But at least the days are longer, and I feel like I actually have time again. The class I'm taking is a computer class, something that wasn't available when I was younger.

      I'm sorry about your cold/allergy. It makes everything feel so much harder when you're sick. I hope that this weekend is restful, and helps you feel much better. Hmmm, I hope that it's only the first half of May that will be cold for you. I haven't checked long range forecasts for our area. Cooler temps must mean more clouds and rain for you? Looking on the bright side, more rain is better than drought. And maybe the end of May will bring lots o sunshine to make up for the cool/cloudy spell.

    2. I've had to adjust my totals for groceries and such. I needed to shop Friday night and spent a little raising our totals to #50. Boo hoo. Hubby was going to make dinner all week and kept asking "do we have_____, where can I find_____"? Each time I laughed so he made do with what he could find. But we needed milk, butter, eggs, yogurt, fresh fruit and veggies and then he kept putting things in the cart that were not on the list. He is a good shopper and earlier in the week bought a pork roast so we had pulled pork, BBQ pork and now pork veggie soup. We've been having good meals all weekend from that pork.

  3. I can't tell that your meals are on the slim side. They all sound tasty.

    We have had a few months of weather extremes--during the winter we fluctuated frequently between very cold and milder than usual. This spring our weather has been warmer than usual but we are fluctuating between heavy rains and brilliant sunshine. I'm feeling less cabin-feverish than usual because I've been off on several of the nice weather days and have been able to get outside. We are going to Yellowstone this summer so I'm trying to gear myself up for hiking. :) I'm hoping the heavy rains predicted for this weekend won't result in a flooded basement ...

      A trip to Yellowstone sounds like a lot of fun. Your kids will remember this vacation. I was nine when our family went to Yellowstone and I still remember that trip, well. Will the heavy rains let up by late spring/early summer? Or do you ever get rainy summers, there? I hope the rains aren't doing any damage in your area, and that your basement survives the weekend. I've never lived in a house with a basement, so I don't know what that could be like. But for me, it would be worrisome.

    2. My understanding is that we will need to pack layers as snow is likely in the elevations. We have decided on taking our truck, even though the gas mileage isn't as good, because it's roomier for travel and we have more room to store whatever we need, including layers of clothing. :)
