This is another of my mother's recipes. They're a refrigerator cookie. You mix the dough, form it into a long shape like a log or in this case, rolled out and stacked in layers (alternating flavors) inside a narrow box, and then refrigerate until firm.
With the layered dough, after chilling, I unbox and trim up the edges a little.
Then I slice the dough thinly and
place on a buttered baking sheet.
They bake up nicely and look pretty appealing.
I hadn't planned on baking these cookies for Christmas. But, I made spiced nuts over the weekend, and those use egg whites. The chocolate-vanilla refrigerator cookies use an egg yolk. I was able to use the leftover yolk in these cookies after making the nuts.
Our freezer is now very full of baked cookies. I'll begin thawing some tomorrow as I put together plates of cookies for some of our neighbors. On Wednesday I'll pack tins of baked goodies for my son and daughter-in-law, which I will stack as a treat tower for one of their gifts.
I've made my work list for the next three days. Everything is beginning to come together, but there is still plenty of work to do. I hope all of your work is wrapping up, leaving you to relax and enjoy Christmas with your loved ones.

DeleteI made both a batch of spiced mixed nuts and a batch of spiced peanuts this year and last. My daughter-in-law is allergic to tree nuts, but can have peanuts. The peanuts made with the same recipe are also delicious. I hope you and your recipients find the spiced nuts enjoyable.
I also made the spiced nuts! I made a double batch and have 2 egg yolks hanging out in my fridge. I'll figure out something to use them in. My mom made cookies similar to yours, Lili.
ReplyDeleteMy husband arrived late last night with a trailer of my son's stuff. He's moving in temporarily with us , as the funding stream for his job disappeared. We need to get everything indoors so my husband can return the trailer. I need to sort through my son's room to clean up things I have stored there. I'm figuring out an alternative cinnamon roll recipe today for our Christmas breakfast. Tomorrow I'm hosting an open house for my extended family. I feel like everything is under control, but I'm busy!

DeleteWith those two egg yolks, I had several treats I was making this season that only used egg whites, so I had a lot of extra yolks. Most of the time I just added an extra yolk or two to an egg dish I was making for the family, like crustless quiche. I hope you find a good way to use your extra yolks.

DeleteWe had our big family Christmas party last night and had a great time. There were 15 of us ranging in ages from 1 - 70. After having pizza, salads and appetizers we decorated gingerbread houses (from graham crackers), played the saran wrap ball game, did the ornament exchange and had a small concert by three grandchildren. Our Christmas Eve will be a quiet one - taking Chinese food to my mom who lives in an assisted living. Our Christmas Eves have certainly changed over the years but that's what life is about. I am just grateful for the chance to have some quiet moments to reflect on the true meaning of this season. Merry Christmas to all!

DeleteYour Christmas party with family sounds like it was a lot of fun. Did you attach the graham crackers to individual milk cartons or were you able to attach graham crackers to each other without extra support? What a fun night you had.
Your mom will really appreciate being able to spend Christmas Eve with you and your husband. I know you will enjoy the times with her. And I think you have the right attitude about now, at this stage of life, having the time to reflect on the birth of Christ.
