It's been a busy week.
Leading up to the Easter holiday last weekend, I spent a lot of time in the kitchen. I spent a bit of time Thursday and Friday prepping, followed by most of the day Saturday. The dinner went well and left us with a lot of leftovers.
Once easter was over, I had to get to the garden and work on getting veds prepared and planted. I had spent Monday afternoon working in the garden, so a quick and easy dinner of leftovers on Monday was welcome. In fact all week I've been busy in the garden. As a result, our dinners have been streamlined compared to my regular cooking. I did whatever I could to make meals simpler, including using cheese and crackers as a dish one night and dried fruit right out of the bag on two nights.
Rain is expected to return on Saturday, so I'll put in one more long day getting stuff done in the garden.
Here's what we've been eating this week.
Friday (daughter cooked) pizza and movie night -- we watched Sherlock Jr. (1924)
scratch pepperoni pizza

Saturday (other daughter cooked) first cookout of the season

I'll start with Sunday: roast chicken, ham slices, mashed potatoes, aspargas, cabbage, dinner rolls, lemon dessert. I immediately put the carcas in my instant pot and let it cook for 1 1/2 hours and got nearly 2 quarts of chicken broth.refrigerated that to get the fat to float to the top. Monday was a plate of leftovers for each of us from Sunday. Tuesday was a small amount left from Sunday/Monday but I added the leftover frozen hash browns from a tater tot casserole last week that I didn't use along with a couple of frozen chicken tenders (busy day for me). Wednesday was oldest daughters birthday so we took her and our son out for breakfast and spent the day with her letting her use some teacher gift cards she was given. Went home and had a big salad with an air fried strip steak sliced on top for supper. Thursday I made red thai curry soup (with chicken broth from Sunday) and pan fried a pork steak to go with it. We often use meat as a garnish rather than a main meal. Tonight will probably be red thai curry soup with no additions.

What you said about using meat as more of a garnish rather than the main event at meals is how we do meat most of the time, too. (Holidays are different for us.) Tonight I took a cut of beef that might normally be the meat course for 2 adults. I used that amount to serve 4 of us in a stew. Not only does it save money, but I think it may be better for us.
We went out to a Thai restaurant on Easter. It was my son's birthday and that was his choice. I had leftovers from there for dinner and lunch the next day, but everyone else finished their food. A few things we've had this week are pizza, fruit salad, kale salad, taco cups, tiki masala.

DeleteSo many birthdays in spring. I think I wished your son a happy birthday when you mentioned it, but in case I didn't -- happy birthday to your son!
I've never made tikka masala. I just looked up a recipe and it sounds do-able. I've found a store that has a great and extensive bulk spice selection, so I could easily buy just enough for the recipe of the spices I don't normally keep on hand. Your meals sound tasty.
My husband did Easter dinner. I made chicken legs in the crockpot (sort of an Asian-inspired recipe), chili and cornbread, chicken thighs with grapes (had some grapes that needed to be eaten up). We had the chicken and grapes two different nights, and we also had leftover shepherd's pie for one of our dinners. All the meals were tasty.
