Monday Morning and Jumpstarting My Nutrition for the Day

This is my view out the kitchen door in the morning. The pumpkin patch is so colorful. Even on a dreary day, the colors of the pumpkins and squashes cheer me.


My breakfast smoothie starts with lots of fruits and vegetables. Today's has the white part of watermelon rind, celery leaves, several small plums, a banana, leftover sautéed collard greens (sautéed in olive oil with a sprinkle of sea salt -- still compatible with a smoothie, IMO), and a cooked carrot. 


Once I get this blended I add chia seeds, flax seed meal, peanut butter, peanut butter powder, beet root powder, and 2 kinds of greens powder (one pricey, one budget). I use the cooking water from the carrot as well as extra tap water to keep it blending. 


The blender pitcher makes enough for 3 breakfasts. I rinse the blender with a tiny amount of extra water as a way to get every last bit out. This is how much I drink each morning.  The rest is in the fridge for 2 more quick breakfasts.

The smoothie is mildly sweet and a bit peanut-y in taste. I try to hit several different nutrients in the smoothie.

I have this smoothie with a cup of coffee. I know that no matter what else I eat for the day, I've gotten 2 1/2 to 3 servings of fruits and vegetables at the start.

  1. Well, that certainly sounds nutritious. It all sounded pretty good until you put in the collard greens. :) I'm not really a smoothie person, but I can see benefits to making one.
